Green Enchilada Sauce
1.5 lbs Anaheim Chiles
1 lb Tomatillos
2 medium white onions
2 tbsp minced garlic
2 jalapenos seeds removed
1 tbsp ground cumin
3 cups water
salt and pepper to taste
Roast chiles at 400 degrees for 30 minutes. Remove skin and seeds. Chop the rest of the ingredients and saute them together in a large pot, add all ingredients with water and cumin, season to taste. Blend once cooled. This should make about 2 mason jars of sauce.
Enchiladas- wrap cooked chicken breast into tortilla, pour green sauce, sprinkle 2 oz of lite mozzarella, bake 375 for 20 minutes.
WW points- we try to use 1 point tortilla (kroger brand), 1 oz of mozzarella for 1 pt. We’ll eat a total of 6 points for 4 enchiladas per person.
Most store bought sauce has plenty of oils or other things we are not even sure about and we check to see the points for our calories, it wasn’t worth eating. So I gave it a try to make it on my own and I’ll be honest, it’s a bit of work to make but the beauty is, when you make it once, you’ll have the 2 jars that will make plenty of meals for enchiladas. We also love to use it for eggs. This was definitely our go to comfort meals that was ww friendly and can you believe this is our diet!
